Salmon Gunkan with Spicy Mango Salsa Topping

Ingredients

Serves 4–6 (makes ~18–24 pieces)

Gunkan Base

  • 18–24 salmon gunkan (prepared using Salmon Gunkan Sushi (Base Method))

Spicy Mango Topping

  • 1 ripe mango, finely diced
  • ½ red chili, finely minced
  • 1–2 tsp lime juice
  • Pinch of salt
  • (optional: ½ tsp olive oil)

Instructions

  1. Prepare the salmon gunkan base using Salmon Gunkan Sushi (Base Method).
  2. Finely dice mango and chili into very small cubes.
  3. Mix mango and chili with lime juice and a pinch of salt.
  4. Spoon a small amount of mango mixture onto each gunkan.
  5. Finish with a light drizzle of chili or extra lime if desired.
  6. Serve immediately.
