Salmon Gunkan Sushi (Base Method)

A clean and modern take on gunkan sushi where sushi rice is shaped and wrapped with fresh salmon instead of nori. A versatile base for a variety of toppings and flavor combinations.

Rice Base

Salmon Wrap

  • 250–300 g fresh salmon (sushi-grade), thinly sliced

Instructions

  1. Prepare sushi rice using Perfect Sushi Rice (Base Method).
  2. While slightly warm, shape the rice into small oval or round bases using your hands.
  3. Slice the salmon into thin, even strips.
  4. Wrap each rice base with a slice of salmon to form a clean outer layer.
  5. Press gently to secure the shape without compressing too tightly.
  6. Arrange on a serving plate and keep slightly cool until ready to use.

Notes & Pro Tips

  • Use thin, even salmon slices for the cleanest wrap
  • Slightly warm rice is easier to shape and gives better structure
  • Do not over-compress — the texture should remain light
  • Keep sizes consistent for a more refined presentation
