Rocky Road

A rich and chewy chocolate treat loaded with marshmallows, soft caramel candies and crunchy salted peanuts. This Swedish-style rocky road is dangerously addictive and perfect for Christmas, dessert tables or cozy fika moments.

Ingredients

Makes approximately 20–25 pieces

Rocky Road

  • 600 g dark chocolate (70%)
  • 260–440 g Dumle caramel candies
  • 2–3 cups mini marshmallows
  • 3 dl salted peanuts
  • 1 dl shelled pistachios

Optional Toppings

  • Extra marshmallows
  • Extra pistachios
  • Flaky sea salt

Instructions

  1. Line a baking tray or baking dish with parchment paper.
  2. Melt the dark chocolate gently over a water bath or in short intervals in the microwave.
  3. Cut the Dumle candies into smaller pieces if desired.
  4. Fold marshmallows, peanuts, pistachios and Dumle candies into the melted chocolate. Reserve a small amount for topping if desired.
  5. Pour the mixture into the prepared tray, spreading it into an even layer about 3 cm thick.
  6. Top with extra marshmallows and pistachios.
  7. Refrigerate for at least 1–2 hours, or until fully set.
  8. Cut into squares or bars before serving.
