Luxury Shrimp Toast Bites (Toast Skagen)

A classic Scandinavian appetizer with creamy shrimp, fresh dill and bright lemon served on golden butter-fried bread. Rich, fresh and perfectly balanced with a refined finish.

Ingredients

Serves 4

Skagen Mix

  • 1 kg shrimp with shell (or 400 g peeled shrimp)
  • 1/2 cup mayonnaise
  • 2-3 tbsp crème fraîche (use sparingly)
  • 1–2 tbsp finely chopped dill
  • Optional: 1–2 tbsp Kalix roe
  • Finely grated lemon zest (yellow part only)
  • 1–2 tsp lemon juice (to taste)
  • Salt
  • Coarsely ground black pepper

To Serve

  • 4 slices white bread (crusts removed)
  • Butter (for frying)
  • Finely chopped red onion
  • Roe (for topping)
  • Fresh dill
  • Lemon slices

Instructions

  1. Peel the shrimp if using shell-on shrimp. Chop lightly if large.
  2. In a bowl, combine mayonnaise and crème fraîche.
  3. Add shrimp, dill, optional roe and lemon zest.
  4. Gently fold everything together.
  5. Season with lemon juice, salt and black pepper to taste.
  6. Trim crusts off the bread slices.
  7. Fry bread in butter until golden and crisp on both sides.
  8. Spoon the skagen mix generously onto the warm bread.
  9. Top with red onion, roe and fresh dill.
  10. Serve with lemon slices on the side.

Notes & Pro Tips

  • Use crème fraîche sparingly — too much will make the mixture loose
  • For a firmer texture, lightly whip the crème fraîche before mixing
  • Use only the yellow part of the lemon zest to avoid bitterness
  • Serve immediately after assembling for best texture contrast
  • Warm bread + cold skagen = perfect balance
