Classic Skagen Mix

A creamy Swedish shrimp salad made with mayonnaise, dill, lemon and roe – now upgraded with fresh red onion for extra texture and sweetness. Perfect for toast, crispy rice or elegant appetizer bites.

Ingredients

Serves 4

Skagen Mix

  • 1 kg shrimp with shell (or 400 g peeled shrimp)
  • 1/2 cup mayonnaise
  • 2-3 tbsp crème fraîche (use sparingly)
  • 1–2 tbsp finely chopped dill
  • 1 small red onion, very finely chopped
  • Optional: 1–2 tbsp Kalix roe
  • Finely grated lemon zest (yellow part only)
  • 1–2 tsp lemon juice (to taste)
  • Salt
  • Coarsely ground black pepper

To Serve

  • Finely chopped red onion
  • Roe (for topping)
  • Fresh dill
  • Lemon wedges or slices

Instructions

  1. Peel the shrimp if needed and ensure they are fully thawed and well drained. Lightly chop if they are large.
  2. In a bowl, combine mayonnaise and crème fraîche.
  3. Add shrimp, dill, optional roe, lemon zest and finely chopped red onion.
  4. Gently fold everything together until evenly combined.
  5. Season with lemon juice, salt and black pepper to taste.
  6. Let the mixture rest in the fridge for at least 15–30 minutes to allow the flavors to develop.
  7. Serve chilled, topped with extra red onion, roe, dill, and lemon.

Notes & Pro Tips

  • Use crème fraîche sparingly — too much will make the mixture loose
  • For a firmer texture, lightly whip the crème fraîche before mixing
  • Use only the yellow part of the lemon zest to avoid bitterness
  • The flavor improves after a short resting time in the fridge
  • Warm bread + cold skagen = perfect balance
