Crispy Rice Bites with Swedish Shrimp Mix

Golden crispy sushi rice topped with a creamy Swedish shrimp mix, fresh dill and bright lemon. A refined fusion bite combining crisp texture with a rich and fresh Scandinavian topping.

Ingredients

Serves 4 (makes ~20–24 bites)

Crispy Rice Base

Swedish Shrimp Mix (Skagen Style)

  • 1 kg shrimp with shell (or 400 g peeled shrimp)
  • 1/2 cup mayonnaise
  • 2–3 tbsp crème fraîche (use sparingly)
  • 1–2 tbsp finely chopped dill
  • Optional: 1–2 tbsp Kalix roe
  • Finely grated lemon zest (yellow part only)
  • 1–2 tsp lemon juice (to taste)
  • Salt
  • Coarsely ground black pepper

To Serve

  • Finely sliced green onion or chives
  • Optional: extra roe
  • Lemon wedges

Instructions

  1. Prepare the crispy rice bites using Crispy Sushi Rice Bites (Base Method).
  2. Peel the shrimp if using shell-on shrimp. Chop lightly if large.
  3. In a bowl, combine mayonnaise and crème fraîche.
  4. Add shrimp, dill, optional roe and lemon zest.
  5. Gently fold everything together.
  6. Season with lemon juice, salt and black pepper to taste.
  7. Spoon the shrimp mix onto each crispy rice bite.
  8. Top with chives or green onion and optional roe.
  9. Serve immediately.
