Perfect Sushi Rice (Base Method)

A precise method for perfectly seasoned sushi rice with clean texture, balanced flavor and the ideal structure for sushi, crispy rice and layered rice recipes.

Ingredients

Serves 6–8

Rice

  • 2 cups sushi rice
  • Cold water (for rinsing & soaking)
  • 2 cups water (adjust slightly depending on rice brand)

Seasoning

  • 4 tbsp rice vinegar
  • 4 tbsp sugar

Instructions

  1. Rinse sushi rice under cold water until completely clear.
  2. Soak for 20 minutes, then drain well.
  3. Add measured water and bring to a gentle boil over medium heat.
  4. Reduce heat and simmer gently for ~10 minutes.
  5. Remove from heat and let rest, covered, for 10 minutes.
  6. Dissolve sugar in rice vinegar.
  7. While rice is still warm, gently fold in seasoning until evenly distributed.
