Crispy Sushi Rice Bites (Base Method)

Pressed sushi rice that is chilled, cut and fried until golden and crisp on the outside while soft inside. A versatile base for modern sushi-style bites and toppings.

Ingredients

Serves 6-8 (approx. 20-24 bites, depending on size)

Rice Base

  • Neutral oil, for frying

Instructions

  1. Prepare sushi rice using Perfect Sushi Rice (Base Method).
  2. While still warm, press the rice firmly into a flat tray (approx. 1.5–2 cm thick).
  3. Cover with baking paper and apply light, even pressure.
  4. Refrigerate overnight until fully firm.
  5. Cut into even squares while still cold.
  6. Let sit briefly at room temperature before frying
  7. Pat dry any surface moisture.
  8. Fry in neutral oil over medium heat until golden and crisp on all sides.
  9. Drain on paper towel and serve immediately.
