Tomato & Avocado Topping

Fresh tomatoes, creamy avocado and a tangy balsamic dressing come together in this simple and versatile topping. Spoon it over toasted bread for bruschetta, serve it alongside grilled meats or add it to appetizer boards for a burst of fresh flavor.

Ingredients

Serves 6–8 as a topping or appetizer

Tomato Avocado Mixture

  • 6–8 ripe tomatoes, finely diced
  • 1–2 avocados, finely diced
  • ½ small red onion, finely diced (or leek, thinly sliced)

Dressing

  • 3 tbsp balsamic vinegar
  • ⅓ cup extra virgin olive oil
  • 2 tsp Dijon mustard
  • ½ tsp sugar
  • 1–2 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a medium bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, sugar and garlic.
  2. Season with salt and black pepper to taste.
  3. Add the tomatoes, avocado and onion.
  4. Gently toss until everything is evenly coated.
  5. Let sit for 10–15 minutes before serving to allow the flavors to develop.

Notes & Pro Tips

  • For bruschetta, dice the vegetables quite small for easier serving and better texture.
  • Red onion adds a sharper flavor, while leek creates a milder taste.
  • Delicious served on toasted baguette slices, crostini, crackers or alongside grilled chicken and fish.
