Veggie Sushi Tower

This Veggie Sushi Tower is a fun and elegant vegetarian sushi appetizer featuring creamy avocado, crisp cucumber, spicy mayo and sushi rice seasoned with black sesame seeds. The maki pieces are stacked into a tower and finished with generous swirls of chili mayo, seaweed caviar and crispy sweet potato chips for a beautiful presentation that is perfect for parties, appetizers or a modern sushi-inspired spread.

  • Seaweed Caviar
  • Handful of crispy sweet potato chips

To Serve

  • Soy sauce
  • Pickled ginger
  • Wasabi

Instructions

  1. Prepare the sushi rice according to the Perfect Sushi Rice (Base Method) and allow it to cool.
  2. Place the half sheet of nori on a bamboo mat or sushi rolling mat.
  3. Spread the rice evenly over the nori, leaving a small border along the top edge. Sprinkle the rice with black sesame seeds and carefully flip the sheet over so the rice side faces down.
  4. Arrange the avocado slices and cucumber sticks across the lower third of the nori. Drizzle with the chili mayo.
  5. Roll tightly into a compact maki roll and seal the edge with a little water if needed.
  6. Using a sharp knife, cut the roll into 8 equal pieces.
  7. Stack the sushi pieces into a tower on a serving plate.
  8. Pipe or drizzle generous amounts of chili mayo over the tower.
  9. Spoon the tångrom over the top and finish with crispy sweet potato chips.
