Ingredients

Serves 4

Shrimp

  • 12 frozen panko breaded shrimp
  • Neutral oil, for deep frying

Toppings

  • spicy mayo
  • hoisin sauce
  • white sesame seeds
  • sliced spring onion

Instructions

  1. Heat the oil to 175–180°C (350–355°F).
  2. Carefully lower the frozen shrimp into the hot oil. Do not thaw beforehand.
  3. Fry for 3–4 minutes or until golden brown and crispy.
  4. Fry in batches to avoid overcrowding the fryer or pot.
  5. Transfer to a wire rack or paper towel-lined plate.
  6. Arrange the shrimp on a serving plate. Drizzle with spicy mayo and hoisin sauce, then garnish with sesame seeds and sliced spring onion. Serve immediately while crispy.

Notes & Pro Tips

  • Frying directly from frozen helps maintain a crispy coating.
  • Keep the oil temperature steady for the best crunch.
  • Avoid overcrowding the fryer, as this lowers the oil temperature and can make the coating less crispy.
  • A wire rack keeps the shrimp crispier than paper towels.
  • Serve with shredded cabbage and tonkatsu sauce for a classic Japanese-style presentation.
  • These crispy shrimp are perfect as an appetizer, party snack or alongside rice and salad for a light meal.
