Ingredients

Crispy Rice

  • 12 crispy rice bites (prepared using Crispy Rice Bites (Base Method))

Spicy Salmon

  • 200 g fresh salmon (sushi-grade), finely diced
  • 2 tbsp mayonnaise
  • 1–2 tsp sriracha (adjust to taste)
  • 1 tsp soy sauce
  • ½ tsp sesame oil

To Serve

  • 1 avocado
  • Sesame seeds
  • Finely sliced green onion
  • 1–2 tbsp chili mayo (optional)

Instructions

  1. Prepare the crispy rice bites using Crispy Rice Bites (Base Method) and keep warm.
  2. Finely dice the salmon into small, even cubes.
  3. In a bowl, combine mayonnaise, sriracha, soy sauce and sesame oil.
  4. Gently fold the salmon into the sauce until evenly coated.
  5. Slice the avocado just before assembling.
  6. Top each crispy rice bite with a slice of avocado.
  7. Add a spoonful of spicy salmon on top.
  8. Drizzle with chili mayo if desired.
  9. Finish with sesame seeds and finely sliced green onion.
  10. Serve immediately.
